3 Vegan Dip Recipes

After a long work/school day, one does not feels like cooking a fancy meal, instead have some quick & easy meal to put together. For me, this is snacking on vegan dip with vegan crackers, which I make from scratch. So, here’s the recipe for the vegan dip deliciousness.

Eggplant dip

1 eggplant

2 onions

1/2 cup chickpea

1/2 lemon juice

2 tbsp olive oil

water (eyeball)


I am always all in for anything that has eggplant in it.

Well, firstly, we cook the eggplants in the oven, throw in the onions, as well, if you wish. Actually, you can leave onions altogether if you don’t like the taste (I, personally, don’t, so I leave it). If your chickpeas are already cooked, there’s nothing more left. Throw all the ingredients in the food processor and there you have the delicious dip.




Spinach dip

2 handfuls of spinach, chopped

3/4 cup cashews

3/4 cup water

1/4 cup chickpeas or white beans

3-4 tbsp nutritional yeast

1/4 tsp garlic powder

1/4 tsp onion powder, salt & pepper to taste

2 tsp lemon juice


This recipe is somewhat alike with eggplant dip, only the taste is way different and tasty, as well. It’s nothing fancy, again, just dump in food processor and mix well. Measurements of the spices are not fixed, you can change according to your taste.


Beetroot dip

2 beetroot

2 garlic clove

1/2 onion

1 tbsp olive oil

1 cup walnuts

1/2 tsp cumin

1/2 lemon juiced

1/4 cup water


Lastly, another delicious vegan dip, made with beet, another favorite ingredient. First, put the beetroots in the oven with onions, again, if you don’t like the onion you can leave it. In this recipe, onion tastes good. So, just like the others, we just dump the ingredients in the food processor and mix everything.

I did not want to put exact measurements for the spices because I usually use more cumin than the recipe’s suggestions. So, if you like one spice more than the other you can totally do so, no harm in that, I guess. Plus, I unusally omit the walnut, hah, I leave everything, I guess. I just don’t like the taste of walnuts in my meals, not in salads, not in dips, not in cakes. In my opinion, it’s just good when it’s alone. Just sayin’



Once you make one of these, you won’t even remember about making a decent meal for some time. However, let’s not forget that this would not be healthy choice. So, make small prportions, and do not cheat 🙂 Enjoy your snack.
