Easiest Vegan Gingerbread Cookie Recipe
Here is a holiday cookie – vegan gingerbread cookie recipe with only 4 ingredients! Well, I’m not gonna say it is quick, because it is not, took almost 1 hour to prepare and cook (combined).
- 2 cups of all-purpose flour
- 2 tbsp ground ginger
- 1/2 cup coconut oil
- 1/2 cup molasses
Start by having your 2 cups of flour in a big mixing bowl. Add 2 tablespoons of ground ginger and mix well, until it’s evenly incorporated. Then, add half a cup of coconut butter or any other vegetable oil and a half a cup of molasses mix well. Knead it until it creates a dough.
It is very delicate dough, so it will take some patience. Spring sprinkle flour on the surface and flatten dough on it by taking a part of it.
Now you can try any kind of figures, like you would do with any nin vegan or vegan gingerbread cookie recipe. I decided to try something fun, I cut the square shapes and cut some little squares inside the squares but since the dough was so delicate it took me forever to do that. I was happy with the result,though, also had some Christmas tree cutouts.
Once cookies are places on baking tray, put them in the preheated oven, at 350 F, for 7 to10 minutes or until they are golden brown.
You can decorate them by making whipped vegan cream (with coconut milk). You can add some food coloring to make them more holiday spirit-y.
