Cauliflower Soup Recipe

I recently realized that I haven’t had hearty soup in a long time so I decided to make cauliflower soup. I created my own cauliflower soup recipe and it turned out beautifully so I had to share. ^^

Ingredients;
  • 1 tbsp olive oil
  • 1 small cauliflower head
  • 3 potatoes
  • 1 carrot
  • 1 onion
  • 3 cloves of garlic
  • Salt to taste
  • 1 tbsp cayenne pepper
  • 1-2 tbsp sumac

 

I was not sure about the size of cauliflower (I had small one) but I balanced it out with potatoes. For some taste and texture, I added carrots. I added two carrots but it turned out to be more carrot-y than I expected, so I suggest you use one carrot.

 

Let’s Get Cooking

First, chop all the vegetables. Put the pot on stove and pour olive oil to heat up. Throw onions in it and sauté for 5 minutes or so. After it’s translucent add garlic and salt and mix.

After you can smell the garlic, it’s time for to add remaining vegetables add potatoes and cauliflower. Pour some water or vegetable stock until all the vegetables are covered. Put the lid on, let it boil. After a while, put carrots in and let it simmer for 20 minutes or so. When it’s done, you can blend the soup for smoother texture. You will know it’s down when you can mash the potatoes easily by only squeezing it to the side of the pot. So, once it’s ready, blend it up and serve it hot, with some cayenne pepper. Or, as I like to do, you can serve it with some greens and sumac. I like the sour taste more than spicy taste so I like sumac more.
