Healthy Vegan Lunch
Since it’s winter it’s really cold out here and it’s time to make warm and hearty meals. Personally, I have never met a person who doesn’t like pasta so that’s why today I am making easy vegan pasta with some vegetables on it.
Well, recently I encountered a video about dozen types of food that we should consume daily which is Dr. Greger’s daily dozen checklist. you can check that video afterwards. It’s really important to have all the nutrients to be a healthy vegan. So with that health of that daily dozen checklist I try to incorporate vegetables more into my diet so that is why I made this meal which is pasta with some vegetables and seeds
In the Daily doesn’t checklist there is a box for flax seed. Today I am going to check that box with black sesame seed I’m hoping that it will be enough, nutrient-wise. Without further ado, let’s get cooking.
- 1 cucumber
- 1 carrot
- 2 tbsp black sesame seed
- 1 serving of spaghetti
- salt and spices for taste
- 1 tbsp soy sauce
- 1 cup parsley
Put some water on a pot and boil it. Prepare some spaghetti or noodles to put in the pot when the water is boiling. I add vegetable oil into the water and salt into the water while it’s boiling and then I put pasta into the pot. That way, it won’t stick to each other and salt will be proportionally incorporated.
Now on to the vegetables. We will have a cucumber and a carrot, this is for one person. 1 to 2 teaspoons of black sesame seed. Once you prepared those, mix them together and add some soy sauce and some spices of choice. Mix all that up and once the pasta is ready, let it cool and mix everything together and it’s ready to be served.
