Easy Vegan Snacks
Super quick and delicious easy vegan snacks for a nice movie night.
Toasted Spicy Chickpeas
1 can chickpeas
½ tsp ground cumin
½ tsp smoked paprika
¼ tsp onion powder
½ tsp sea salt
¼ tsp freshly ground black pepper
½ to 1 TBS olive oil
Wash and dry the chickpeas. But, if you have raw chickpeas you would have to soak them in water for 6-8 hours, preferably, overnight. Then cook them until they are soft. It would be better to add salt into the water while cooking, gives more taste. After they are cooked, rinse them in the cold water, and dry them up.
Onto the good stuff, the dressing. In a small bowl mix all the ingredients with olive oil. Now, it is all done. Now cover all chickpeas with the dressing, and put them on the baking sheet, in one line.
Pop them in the oven for 30-40 minutes, until they are golden. Have them when they are cool, it gets crispier.
Oven Baked Potato Chips
5 potatoes, unpeeled
1/4 teaspoons paprika
1/2 teaspoons black pepper
1/2 teaspoon salt
1/2 teaspoon cumin
Slice potatoes into pieces, try to have the same thickness for the cooking time. I know, it is hard. Wash them, and cover them with paper towel, to soak the moisture.
Put the potato chips in a bowl, drizzle olive oil, or any other vegetable oil, I just love olive oil. Try to get the oil to every slice. Then pour the spices into the bowl, make sure every bit of chips get spiced. Lay them onto the baking sheet.
Pop that into the oven for 30-40 minutes, or until cooked.
Coconut Date Balls
1 cup soaked dates
1/4 cup oat/ oat flour (optional)
Handful of walnuts/ almonds/ nuts
This was the easiest snack I have ever made.
Take some dates, take out the seeds in them, put the pitted dates into a bowl. Have some boiling water handy, pour that hot water onto the dates, wait for 10-20 minutes. After some time dates will be a lot softer, fish them out, but don’t throw the water, you can use it for smoothies.
Put the soaked dates into food processor, blend them until it gets like peanut butter consistency.
Dice some walnuts and/ or other nuts, according to taste. You can also use oats, or oat flour. Next, pour these two mixture into the dates. Mix a bit more, and ta-da it is almost done.
Have some water by your side. After that, take a piece from mixture, wet your hands, and roll them into a ball. Then roll them in the shredded coconut. Put the date balls in the freezer for 10 minutes, or in the refrigerator for overnight. Easiest snack ever!
