With holidays coming up, us – vegans get a bit nervous about what to bring onto table. For both healthy and extremely delicious meal idea, I chose this gorgeous looking roasted spicy cauliflower with tons of spice on it. Yumm. Effortless, yet dinner-table-approved appetizer, coming right up!
- 1 Cauliflower
- 2 Tomatoes
- 1 Onion
- 2 tsp salt
- 2 tsp turmeric
- 1 tsp cumin
- 1/2 tsp chili flake
- 1 tsp coriander
- 2 tsp veg oil
First, we put some water to boil while we chop the cauliflower. You can, actually, leave the cauliflower as is, but I recommend chopping it. Because all the taste is in the sauce, and when it’s not chopped, the sauce doesn’t cover every part of it. So, we chop and wash the cauliflower. Once the water is boiling, add 2 teaspoon of salt and 1 teaspoon of turmeric. Then, place the cauliflower(s) in the pot to simmer for 5 minutes. After 5 minutes, come back and turn them over, so the taste can incorporated everywhere.
While those are cooking, we’d better prepare the sauce. Chop tomatoes and onion. On a medium heat, add onions into frying pan to sauté. Then, add ½ teaspoon chili flakes. Honestly, you can add as much spice as you wish. The hotter, the better. You can add garlic and ginger, according to your taste. After 1-2 minutes add tomatoes and other spices – cumin, turmeric, coriander. Cook them for about 1-2 minutes, too.
At this point, you can add some cashew and coconut milk in you sauce.
3/4 cup coconut milk
1/3 cup soaked cashew
3/4 tsp salt
1/2 tsp liquid sweetener
Blend this all together. Add the cooked tomato-onion sauce, blend some more.
The cauliflower should be ready by now. Place them on a baking tray. Pour this delicious sauce on the cauliflower to make appetizing roasted spicy
cauliflower deliciousness. Bake this in the oven for 20 minutes at 400F.
