So, it was my birthday the other day, and it was pretty new I converted into veganism, and I wanted to have my birthday cake. So, I searched for the perfect recipe for a vegan birthday cake, and the one I foundturned out to be great. A little too strong for me, but it was delicious.
1.5 cup flour
1/4 cup cocoa
1/2 tbsp salt
1 tsp baking soda
1 cup sugar
1/2 cup veg oil
1 cup water
1 tbsp instant coffee
For the frosting/ ganache;
70% dark vegan chocolate
It was funny how much I keep going on and on about the fact that it has now sugar in the recipe, however, I had just missed it. I hadn’t put the sugar in the first time, and it turned out great, as well.
So, sift the first 4 ingredient for any possible chunks, then add sugar. That was the part I skipped over, because of the sifting. Anyway, mix them all together. In the cup, have warm drinkable water, add instant coffee, mix. Add half a cup of vegetable oil and coffee mixture into the dry ingredients. Mix them well, pour into the baking tray. You can either cook them all together then cut into two pieces, or cook them separately from the beginning. Pop them in the oven for 20-30 minutes. Keep an eye, could be baked real fast.
While we’re waiting for it to cook, we can make our ganache. Mine actually turned out to be chocolate sauce. Maybe that was because of the refrigerating time.
So to start, put some water to boil, onto that put some bowl that wouldn’t touch the water. Pour coconut cream into the bowl. While waiting for it to get warmer, chop the chocolate into smaller pieces for them to melt easily. Put the chocolate, melt them completely. Then we’ll wait for it to get cooler. It can wait in the refrigerator.
By that time, cake should be ready. Take it out of oven, let it cool. After keeping ganache in the refrigerator for 20-30 minutes, take it out and whisk it until it changes color to lighter brown.
Put one piece, pour ganache and smooth it, the put another slice, repeat. You can have as many layers as you prepared. I did only two, wish it were 3-4, looks prettier. To make it even prettier, you can add toppings of your choice. Cranberries, strawberries, walnuts, almonds, shredded coconut, etc. options are limitless for a vegan birthday cake.
Put the cake in the fridge overnight, and the next day you will enjoy this delicious vegan birthday cake in its fresh version.
