It’s the time of the year! We’re going to bake vegan cookies now. Time to bake vegan chocolate chip cookies. It is the easiest vegan cookie recipe I have seen so far, to be honest. So, let’s get started. 🙂
- 1/2 cup flour
- 1 tsp baking soda
- 1/3 cup granulated sugar
- 1/2 cup brown sugar
- 1 flax egg
- 1/2 cup vegan butter
- 1 tsp vanilla extract
- 1 cup non-dairy chocolate chips*
Let’s get cooking!
First, preheat your oven at 350F. Place a lightly oiled baking sheet on a baking tray.
To make flax egg, combine 1 tbsp ground flax with 3 tbsp water and let the flax soak for a while. Put vegan butter out, let it come to a room temperature.
While those are waiting, we mix the dry ingredients, except for sugar. We will mix the sugar and butter first, until the mixture is nice and fluffy. Add the wet ingredients to the butter mixture. Once flax egg and vanilla extract is combined, add all the dry mixture into wet mixture and fold. Try not to over-mix.
When this batter is ready add chocolate chips to it. Well, now on this point chips I’d say you can add as much as you’d like.
Now it’s time to cook. Take spoonful of batter and and place the cookies on the baking tray. Bake them for 12-15 minutes until the bottom of cookies are brown. They may look undercooked on top, but check with the bottom. When 15 minutes is passed, remove them from the oven and place them on cooling rack. When they are cooled you can enjoy the deliciousness.
