Recipe For Christmas Deliciousness!
We’ve got to be ready for Christmas-food cravings! Let’s make some vegan gingerbread cookies.
- 2 and 1/4 cup all-purpose flour
- 1 tsp baking soda
- 3 tsp ground ginger
- 2 tsp cinnamon
- 1 tsp ground cloves
- 1/4 tsp fine sea salt
- 1/2 cup vegan butter or margarine
- 1 C packed light brown sugar
- 1/4 cup molasses
- 1/4 C non-dairy milk
- 1 tsp vanilla extract
- extra flour to flour the surface
Mix all the dry ingredients and set it aside. Take your vegan butter or margarine (which is at room temperature) mix it with brown sugar until fluffy. One by one, add the other wet ingredients to the mixture. When they are well incorporated, add this to the dry ingredients and carefully fold it into dough. When you see you can handle, it’d be better if you knead, that’s much easier. Wrap this dough in a plastic wrap and let sit in the fridge for an hour.
Time to make those yummy vegan gingerbread cookies!
Set your oven to 350F while preparing and cutting the cookies. Flour the surface, avoiding sticking. Roll the dough, to half a cm thickness. Cut them into whatever shapes you want. Line them on the baking sheet and put them in the oven for 5-8 minutes. Once they are done, let them cool before putting the icing.
Well, personally, I am trying to cut excessive sugar from my diet, that’s why I did not use this icing on my cookies. However, rest of the family deserves this! LOL
- 2 1/4 C powdered sugar
- 3 tbsp warm water
Just whisk them together until you get desired consistency, which is runny enough to decorate, hard enough to stay where you put them 🙂
If you want to make them a bit more runny (to cover more part of cookie easily) you can add 1 more tbsp water.
