Well, December is here, and I am feeling festive! Now all we need is some cookies and hot chocolate! Let’s get baking, then.

Today we’re making healthy and filling vegan cookie. There will be more cookie recipes to come. This one is as simple as any. You can absolutely add your favorite toppings, such as chocolate chips, cranberries.


  • 3 cup flour
  • 1/4 cup cocoa powder
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 cup vegan butter
  • 1/4 cup sugar
  • 1/2 cup applesauce
  • 1 tsp vanilla extract
  • 1 tbsp food coloring (optional)

Mix dry ingredients, first, in a big mixing bowl. In other bowl, mix butter and sugar until fluffy, then add applesauce bit by bit. Add vanilla extract to this mixture, then add all the dry ingredients, as well. Knead it into dough. Knead well, until it stays together.


Total should make almost 20 cookies or so, depending on the size you like yours. Put it in the oven at 450 F for 15 minutes.

This one became my favorite as soon as it was ready, because it did not take that long.

  • 1/4 cup cocoa powder
  • 2 tbsp sugar
  • pinch of salt
  • 2 tsp cornstarch
  • 1 cup non-dairy milk

pour non-dairy milk in a pot and warm it up. Add cocoa powder, sugar and salt. Stir until sugar is solved. Meanwhile, in another bowl, have 2 tbsp warm water, add 2 tsp cornstarch and mix well. Slowly, add this mixture into cocoa mixture. Stir constantly until it thickens up.
