As hostesses, we feel pressure for we have to make the best meal ever to present to our guest. There’s much more pressure when the hostess is vegan, especially, if we went vegan recently. Wow, let’s now calm down and choose the best flavor for our thanksgiving dinner. Here are 5 delicious vegan thanksgiving stuffing recipes that you can make easily while your guest wouldn’t even miss the meat.

 

 

Cauliflower stuffing

This vegan thanksgiving stuffing is my most favorite one, because it is both vegan and gluten-free. Not to mention tasty! This recipe will take only 30 minutes or so.

Ingredients;
  • 4 tbsp vegan butter
  • 1 onion
  • 2 carrots
  • 2 celery
  • 1 small cauliflower
  • 1 cup mushroom
  • 1/4 cup parsley
  • 2 tbsp rosemary
  • 1 tbsp sage
  • 1/2 cup vegetable broth

 

In a skillet, we add butter, finely chopped onion, chopped carrots and celery, sauté for 7-8 minutes. While they are on the stove, prepare cauliflower and chop mushrooms. Add to the sauted mixture and let it cook until tender or for 5-10 more minutes. Add parsley, rosemary, sage and veggie broth and cover the lid. Let it cook for 15 more minutes. And Enjoy!

 

Squash stuffing

My second favorite. This one is a bit similar to the first one, only it’s a bit mushier. Unfortunately, not gluten free. However, you can keep it GF by substituting rice with quinoa. Another good thing with this recipe is that, it comes with the ‘turkey’!

Ingredients;
  • 1 squash
  • 1 tbsp olive oil
For stuffing
  • 1 tbsp olive oil
  • 2 carrots
  • 2 celery
  • 1 onion
  • 2 garlic cloves
  • 1/2 cup wild rice
  • 1 cup vegetable broth
  • 1/2 cup walnuts
  • 1/2 cup dried cranberries
  • 1 tsp sage
  • 1/4 tsp thyme
  • 1/2 salt & pepper

 

Well, obviously, our ‘turkey’ here is the squash. Coat the squash with olive oil and put it in the oven for 1 hour or so. Keep an eye on the so it’s not cooked too much. Because we need it to stay together when we serve. For the stuffing, we do the ame thing as the first one, basically. We sauté finely chopped onion, chopped carrots and celery, garlic for 7-8 minutes. While they are on the stove, we add wild rice and veggie broth to the sauted mixture and let it cook until tender or for 10 more minutes. Add walnuts, cranberries, thyme, sage, salt and pepper and cover the lid. When the squash is ready, scoop out the flesh, leaving 2 cm thickness on the squash, add the flesh to the stuffing.

Now pour the stuffing into carved squash and put it in the oven for 30 more minutes. Serve it with quick onion gravy. And Enjoy!

 

 

Mixed vegan thanksgiving stuffing recipes

This one is a bit different than the first 2, you will get creative here.

Ingredients;
  • 1 tbsp olive oil
  • 1 cup leek
  • 3/4 cup celery
  • 1 shallot
  • 2 cloves of garlic
  • 1 tbsp sage
  • 1 tbsp rosemary
  • 1/2 tsp nutmeg
  • 1/4 tsp salt & pepper
  • 1/2 cup veggie broth
  • 1/2 cup dried cranberries
  • 1/3 cup parsley

This is our base. To make this, we add first 4 ingredients and cook for 5 minutes. Then, we add all spices and cook for 2 minutes. Next, we add parsley, cranberries and stock and cook it for 5 minutes with lid covered.
